As a spice, thyme is used both in its raw and dry form. Opinions are divided on dry or raw thyme, because drying loses flavor, but new technologies allow better flavor retention for dry spices as well. Thus, ground thyme has become popular in most European kitchens.
Dry thyme is a spice that seasoneth very well with most spice brutes, with a strong, fresh, lemonous aroma. It can be used in preparations based on beef, eggs, cheese, along with paprika, garlic or oregano.
Ground thyme can also be added to preparations based on sausages, chicken, lamb, potatoes, sauces, soups, steaks and vegetables.
